- Can I use coal briquettes or lighter fluid in my kamado grill?

Avoid this! Briquettes contain a variety of materials, including nitrates, chemicals, anthracite coal, limestone, treated wood, starch, sawdust and petroleum byproducts.

- Which charcoal should I use that does not have these additives?

We recommend using only 100% natural charcoal for a clean, controllable energy source. Natural charcoal burns efficiently and produces very little ash, so clean-up is easy. NEVER USE lighter fluid or charcoal products containing lighter fluid, it is not needed and it gives a chemical taste to the food.

- It looks like small cracks in the color of the ceramic, is something wrong?

Crazing occurs when ceramics are painted and the ceramic and glaze harden at different temperatures. This creates a cobweb-like pattern that is found on all painted ceramic products and kamados. This does not affect the longevity of either the ceramic or the surface in general, nor does it affect the function of your Sumo . It is more or less prominent in different lighting conditions and you can sometimes even reduce how much it shows by wiping the surface with a damp cloth.

- I used lighter fluid in my Kamado Sumo which now smells. What can I do?

If you have used lighter fluid in the kamado, you will need to light up your kamado to 250° C and conduct several heatings without food for about an hour each to burn off the lighter fluid and the smell of lighter fluid.

- What is a heat deflector and why should I have one?

A heat deflector is used for indirect cooking on your Kamado SUMO, creating a barrier between food and fire and turning your kamado into an outdoor oven. The design of the heat deflector allows the heat to radiate within the kamado while preventing the direct heat from the fire to reach the food. A heat deflector will definitely give a greater versatility to your outdoor cooking.

- Can I place my grill directly on wood or a table?

Do not place the kamado directly on a wood surface or near combustible surfaces. The bottom of the kamado generates significant heat when used, and can cause fire if placed directly on or in close proximity to combustible material. Alternatively, a concrete block can be used to support the kamado if it is built into a table. Always close both valves completely at the end of the cooking.

- What distance is needed from combustible materials?

The bottom of the kamado can generate significant heat when used, and can cause combustion if placed directly on or in close proximity to combustible material. Do not leave a lit kamado unattended with the lid open. Pay attention to dry leaves, decking and other combustible material that is in the vicinity of the kamado when used, as they may pose a risk of fire if coal or sparks come into contact with it.

- How often do I need to clean my barbecue?

Ashes should be removed regularly to keep the fireplace adequately ventilated. Kamado Sumo is coated with a glaze that is easily wiped clean without chemical cleaners. Inside, the residual heat burns off excess grease - just like a self-cleaning oven. Other than removing ash, wiping the outside and brushing the grill grate, regular cleaning is not necessary. As part of the annual maintenance and for optimal functioning, it is recommended to remove and brush the internal parts. DO NOT USE ANY chemical cleaners in the kamado.

- How do I clean the heat deflector and pizza stone?

The heat deflector and pizza stone gets a natural patina – but they are just as good to use in spite of it. For regular cleaning, when the heat deflector or pizza stone has cooled completely, scrape away leftovers with a scraper and dry with a damp cloth. Over time, the heat deflector and the pizza stone darkens and can get spots – this is normal and does not affect the taste. Do not put the deflector or pizza stone in water and do not wash them in the dishwasher.
