The Signature Junior includes a ceramic heat deflector that is designed to give you more options when grilling, allowing you to choose between direct and indirect grilling, as well as smoking and baking. A heat deflector protects larger pieces of meat that will be on the grill for longer periods of time from the direct heat of the embers. The effect is that the kamado becomes an oven and the food can be cooked more slowly at a lower heat. Real barbecue is indirect grilling and smoking - so-called low-and-slow, where the heat deflector is necessary for long cooking sessions on the grill.
TOP VALVE
The stainless steel top valve is designed to provide optimized airflow for improved temperature control. The innovative design provides unlimited possibilities where the entire top can be opened up for maximum airflow for the really high temperatures. At the same time, the elegant design combines the possibility of precision airflow adjustment at a very accurate level to regulate the temperature to exactly the desired levels for smoking and low-and-slow.
