Recipe for luxurious Kamado Pizza Bianca with truffle oil and mushrooms
Making a Pizza Bianca with truffle oil and mushrooms with your Kamado Sumo is a perfect way to take pizza baking to the next level. Thanks to the high heat and even heat distribution of the kamado grill, you can create a crispy base and a rich topping with amazing flavors. This pizza is luxurious and suitable for both everyday and festive occasions - a must for lovers of smoky notes and gourmet pizza!
Ingredients (for 2 pizzas):
Pizza dough:
- 500 g flour
- 3 dl water (lukewarm)
- 10 g salt
- 7 g dry yeast
- 1 tbsp olive oil

Topping:
- 150 g crème fraîche
- 100 g fresh mozzarella (grated into pieces)
- 150 g mushrooms (chanterelles, mushrooms or shiitake)
- 2 tbsp truffle oil
- 50 g Parmesan cheese (grated)
- 1 tsp dried oregano
- Fresh thyme (optional)
- Flint salt and black pepper

Preparation
Pizza dough:
- Dissolve the yeast in lukewarm water.
- Add flour and salt, and knead until you get a smooth dough. Add olive oil at the end.
- Leave the dough to rise under a damp towel for at least 1 hour, preferably longer for better flavor (cold rising in the fridge overnight works great).

- Clean and slice the mushrooms.
- Lightly fry the mushrooms in a dry pan to remove excess liquid. Season with a little salt and pepper.
3. prepare your Kamado:
- Set your Kamado for indirect grilling and heat up to about 300°C.
- Place a pizza stone on the grill and let it get really hot (about 15-20 minutes).

How to bake the pizza:
- Shape the dough: Divide the dough in half and shape the pizza bases on a floured surface.
- Assemble the pizza: Spread the crème fraîche on the base, add the mozzarella and mushrooms. Top with oregano, parmesan and thyme.
- Grill the pizza: Place the pizza on the pizza stone and grill for about 7-9 minutes. Drizzle with truffle oil when serving.
