Barbecue tips - How to prepare your barbecue for use

Preparing your Kamado Sumo for use is essential for a better cooking experience.
First of all, you need to choose the right charcoal, Kamado Sumo's Marabu is an excellent all-round choice that provides long, stable heat and minimal smoke. If you need high temperatures, like when grilling prime rib, Quebracho is a good option or for Neapolitan pizza baking.

To maintain an even temperature in the grill, it is important to control both charcoal and airflow. Light the grill with an electric grill lighter for a quick and safe start-up and avoid lighter fluid, as it can affect the taste of the food and contaminate the ceramic. A charcoal basket helps improve air circulation and makes it easier to adjust the temperature. Fill the charcoal basket three-quarters full for most grilling occasions, and divide the charcoal into different zones to create both hot and mild areas of the grill. This way you can control the heat and cook different dishes at the same time.

Barbecue skewers - A summer favorite

Kamado Sumo skewers are evenly grilled thanks to the grill's heat retention. Cut ingredients into evenly sized pieces for best results, and vary between chicken, beef, vegetables and seafood.

Kamado Sumo's Rotisserie Grill skewers provide extra even cooking thanks to the rotating movement. The skewers get a nice surface while retaining juiciness and tenderness. Grill for 8-12 minutes depending on the ingredients. Let the skewers rest for a few minutes before serving.

Grilling entrecôte - The perfect meat on your Kamado Sumo

Grilling a perfect rib-eye steak on your Kamado Sumo is both easy and delicious. Kamado Sumo is known for its ability to maintain an even and high heat, so once you have the stable temperature in place, you can focus on the meat.

If you're grilling a larger piece of rib-eye steak, leave it at room temperature for a couple of hours before you start grilling. This will allow the meat to cook more evenly. For smaller pieces, you can take them straight from the fridge, but remember to wipe them with some paper before you start cooking the meat.

Place the meat on the grill and grill it directly over the heat for about 2-3 minutes on each side to get a nice sear. Once the surface looks lovely, move the entrecote to a part of the grill with indirect heat to allow it to cook to the desired temperature. For best results, use a
thermometer
to be sure that the meat is cooked well.

When the meat is ready, remove it from the grill and let it rest for a few minutes. This will allow the juices of the meat to remain, creating a better result. Before cutting the meat, give it a quick final kiss on the grid to warm the surface.

Cut the entrecote into slices and sprinkle some flaky salt to lift the flavors. Use our

Grilling hamburgers - the centerpiece of summer

Summer is the best time to put a really good burger on the grill - and with a Kamado Sumo you get that perfect combination of crispy surface and juicy inside. Form pucks of ground meat with a slightly higher fat content - around 20% fat gives both flavor and juiciness.
Don't press them too hard, they should stick together but still have some air left. Place the pucks directly over the embers and let them get a good color, preferably 2-3 minutes per side.
When almost ready - throw on the cheese, let it melt under a melted dome and toast the buns quickly on the grid so they get some surface and heat.
